PISTACHIO AND POM YOGHURT BITES
These guys are quite literally the ultimate looks-pretty-but-requires-zero-effort recipe.
Minimal ingredients, minimal calories, minimal washing up but all the flavour. Enjoy.
- 20 Wonderful pistachio nuts
- 200g greek yoghurt
- 100g pomegranates
- 1 tbsp honey
+ a silicone muffin tray for 12
1 - Mix together the yoghurt and honey in a bowl.
2 - Spoon the mixture evenly into each section of the muffin tray.
3 - Using the back of a spoon, smooth the top of the yoghurt.
4 - Gently press the pomegranates into each yoghurt bite.
5 - Remove the shells on your pistachios and using the back of a large spoon, press down on the nuts to break them down into smaller pieces.
6 - Put the pistachios on top of the bites, pushing down any larger pieces.
7 - Place the tray into the freezer for at least 4 hours.
