POMEGRANATE AND MANUKA HONEY PANCAKES
Because what else will you be eating this week?
- 2 tbsp True Honey Co. manuka honey
- 40g vanilla whey protein powder
- 4 eggs
- 2 bananas
- 1 tsp cinnamon
- 100g greek yoghurt
- 100g pomegranate
+ your choice of oil (I use coconut)
1 - Heat a small pan with a dash of oil.
2 - In a blender, mix together your protein powder, eggs, bananas, cinnamon and 1 tbsp of True Honey manuka honey.
3 - Once smooth, pour 1/6 of the mixture in the pan and rotate until you get a perfect circle.
4 - When one side is golden brown, flip your pancake over and cook for a further 2 minutes.
5 - Repeat this with the remainder of your mixture until you have 6 pancakes.
6 - Place one pancake on a plate, spread 1 spoonful of yoghurt on top and sprinkle with a few pomegranate.
7 - Layer up your stack by placing another pancake on top and repeat with the yoghurt and pomegranate topping.
8 - Once you've decorated the top of your stack, drizzle 1 tbsp of True Honey manuka honey to finish.
